FEELING THE SPIRITS

For your next networking event, mixer or social gathering, try my recipe for an amazing pomegranate rumtini. If it is an event during the heat of summer, try my frozen pomegranate margarita. Both of these drinks are very easy to make and require just a few ingredients. Remember to drink responsibly, and no drinking and driving!

Pomegranate Rumtini

Ingredients:

Bottle of Bacardi Rum

1 bottle of pomegranate juice or a pomegranate drink mixer (get it at Ross for $3.99)

2 ltr bottle of ginger ale

Ice

Shaker

Sliced lemons (or any other type of fruit)

Martini glasses

Instructions:

Fill shaker up with ice. Add 2 shots of Bacardi (more or less according to taste) and 2 shots of ginger ale. Pour pomegranate juice or mixer into shaker. Fill to top. Shake vigorously and strain into martini glasses. Garnish with fruit slice and serve immediately. Each batch makes 2-3 rumtinis.
Pomegranate Margarita

Ingredients:

Bottle of Bacardi Rum

1 bottle of pomegranate juice or a pomegranate drink mixer

Ice

Salt/Sugar (optional)

Blender

Margarita glasses

Large pitcher

Instructions:

Fill blender halfway with ice. Add Bacardi according to taste. Fill the remainder of blender with pomegranate mixer. Blend for about 3 minutes, or until smooth. Pour into pitcher. Garnish glass with salt or sugar (optional). Serve immediately, and freeze any remaining beverage. Each pitcher serves up to 10, depending on the size of the pitcher.
